How To Make Delicious Herb-Infused Water

herbwater21In celebration of National Water Quality Month, created to help remind us of the importance of protecting our water supplies, I wanted to share some recipes for herb-infused waters that are as healthful as they are delicious.

For these recipes, I chose herbs that are growing in my garden, along with a complementary flavor – citrus gives the blends a nice zing, and vanilla beans add a light sweetness to the water. There are unlimited flavor combinations, and it is fun to experiment with a variety of herbs, spices and fruit. Here are a few suggestions to get you started:

Lavender and Vanilla
• 1/4 cup fresh lavender, buds crushed slightly to release the flavor
• 1/2 vanilla bean, sliced lengthwise

Mint and Lime
• The rind of 1 lime
• 1/2 cup fresh mint, coarsely chopped

Shiso and Lemon
• 1/2 cup fresh shiso, coarsely chopped
• The rind of 1 lemon

1. Place ingredients in a quart-sized canning jar and fill with cold, filtered water.
2. Allow the filled jar to sit, refrigerated, for 8-12 hours to allow the flavors to infuse.
3. Strain out the ingredients and return the water to the jar. Keep the jar in the fridge to keep it chilled. It will last 2-3 days.
4. When serving, add some fresh sprigs of herbs or slices of fruit to your glass for a beautiful presentation.

You can adjust the amounts of the ingredients for more intense or milder flavors. Have fun experimenting!

Minted Lemonade: Recipe for a Perfect Summer Drink

In my opinion, two of the quintessential flavors of summer are lemon and mint. And when combined, they create a harmonious flavor combination that is bright and sunny. One of my favorite summer recipes is homemade lemonade, a tasty tonic. Lemons provide us with healthful amounts of Vitamin C and potassium. And mint is, among many other things, uplifting, breath-freshening and soothing for the digestive system.

Homemade minted lemonade is simple to make, requiring just 4 ingredients! Here’s my recipe:

Ingredients

  • 1 cup filtered water
  • 1 cup organic evaporated cane sugar
  • 2 cups freshly squeezed, strained lemon juice
  • 1 cup fresh mint leaves
  • 4 cups of filtered water

Combine the sugar and 1 cup of water in a heavy-bottomed sauce pan and bring to a boil, stirring until the sugar is dissolved and the liquid is clear. Set aside to cool.

Peppermint (Mentha piperita)

Place the lemon juice in a large pitcher with the mint leaves (you can crush some of the leaves to release a bit more mint flavor).

Add the remaining water to the lemon and mint, then sweeten to taste with the simple syrup. Refrigerate for at least one hour to allow the flavors to blend.

Three Tasty Trees For Your Yard

When it comes time to plant a tree you might have your mind on things like shade, fast growth, or pretty flowers in the spring time. However there are many trees that offer edible benefits as well. Here are three trees that look great and give you something to snack on:

  1. Pecan Tree – The Pecan tree is not only a large shade tree but it also produces very tasty nuts. The Pecan tree typically produces the biggest harvest in warmer climates and does well in areas with lots of rain and sunshine. Pecan nuts form with a bright yellow-green skin over the nut. As it ripens the skin starts to pull back until the ripe nut falls out of the tree. There are several varieties of Pecan trees, some of which have larger or more flavorful pecans.
  2. Walnut Tree – Like the Pecan tree, the Walnut tree also produces tasty nuts. The Walnut tree grows better in cooler climates with less rain however so it can be a great alternative to Pecans if your area does not support them. Walnuts also form with a green skin that falls off as it ripens. The nuts are significantly tougher to shell than pecans however. There are also several varieties of Walnut trees, some of which produce bitter and inedible nuts so be aware of the variety you plant.   3. Date Palm – This tropical tree grows best in hot, dry climates. Like most Palm trees, the trunk of the tree is bare and the leaves are clustered at the top. When dates form, the seeds of this plant, they hang down from the crown of the tree in large clusters. Dates are very sweet and are used in many ethnic cuisines. They are best kept and eaten when they have been dried. The sap of the Date Palm can also be used to create a syrup or sweet drink if desired.

As you can see it all depends on your growing zone but you can easily find a tree that gives you both shade and food. Fruit trees are another great option and you can choose climate appropriate ones that serve both your needs and the needs of your environment. Plant a tree and reap the rewards!

Wordless Wednesday: What I Did on Mother’s Day

One of my Mother’s Day traditions is to spend time in the garden. It feels almost decadent to have a full day of unstructured time where I can work with my hands in the fresh air. And last Sunday, the weather couldn’t have been more perfect for such a thing.

We went to the gardening center and picked out flowers and vegetables

Then I turned over the dirt in the raised-bed garden that my husband dug last year

then I added some peat and manure

and I mixed it all until it was evenly-blended

And here is my raised-bed garden, complete with veggies and shade plants. In the background, you can see a flower bed where my husband planted the colorful flowers in the first photo.

How to Make Your Own All-Natural Pesticide

This year, we planted a vegetable garden and have been in constant amazement at the miracle of life happening in our back yard. I was so enthralled with my first full-grown snow pea, that I had to take a picture of it to share with you. However, in addition to the life that is our plants, there is other not-as-welcome life: the inevitable garden pests. Critters with teeth have been nibbling and insects have added decorative holes to our greens.

Wanting to keep to our commitment of maintaining a natural garden, we refuse to buy pesticides, and have planted thing like marigolds and hot peppers, which are supposed to deter interlopers. However, it became apparent that we had to take a bit more aggressive action, so I pulled out the neem oil, which I keep in stock for the production of some of my bath and body products. Neem oil is extracted from the tropical neem tree. I had read a while ago that it is a very effective insecticide, miticide and fungicide, and is listed as okay for use in organic production.

According to Plant-care.com, neem oil has the following features:

• Broad spectrum insecticide/fungicide/miticide

• Controls insects and mites including whitefly, aphid and scale

• Controls fungal diseases including black spot, rust, mildew and scab

• For indoor/outdoor use on ornamental plants, flowers, vegetables, trees, shrubs and fruit and nut crops.

Mountain Rose Herbs says that neem biodegrades rapidly in sunlight and within a few weeks in the soil. Neem oil has very low toxicity to humans and pets, but it is not recommended for internal use.

I had also read that rosemary and lavender are effective pesticides, plus they smell better than neem, so I decided to include the in my natural pesticide.

Here is my recipe: Mix 1 gallon of water with 2 tablespoons of neem, and ½ teaspoon each rosemary and lavender essential oils (I used organic version of all the oils). You can also add a couple of tablespoons of phosphate-free liquid dishwashing soap. Mix thoroughly and pour into a spray bottle. Spray over every part of your plants, mixing frequently to keep the oils and water from separating.

By the way, these Sprayco spray bottles, which I buy at my local family-owned hardware store, are made in the US from recycled materials and provide jobs for handicapped individuals.

USDA’s People’s Garden and Healthy Garden Series

When were on the Mall last month for the Climate Rally, my husband and I passed a vegetable/herb garden on the grounds of the US Department of Agriculture. It looked like a large, very well-kept version of a garden you would find in someone’s yard. It was the first time I had noticed it.

Then, a couple of days ago, I was talking to a friend who works for the USDA who told me that the gardens are part of their People’s Garden Initiative. Secretary of Agriculture Tom Vilsack, established the garden on February 12, 2009 in commemoration of Abraham Lincoln’s 200th birthday. Vilsack challenged all USDA employees to create similar gardens at USDA facilities worldwide, or to help their communities create gardens in vacant lots, schools, or churches.

In addition to the sustainably managed gardens that I happened across, the USDA headquarters is also offering programming from May to August, including workshops and youth programs, all of which are free and open to the public. The workshops will cover topics such as composting, beekeeping, green roofs and natural pest control.

The USDA also has a farmers market, which is held from 10 a.m. to 2 p.m, every Friday from June 4 through October 29. It is located in USDA’s parking lot, corner of 12th Street and Independence Avenue, SW.

Mmmmm…Yard Salad: As Local As It Gets

Yesterday I created a salad made from ingredients that are as local as they get. Each of the ingredients originated on my property – either our month-old garden, or from wild plants.

I was able to harvest a cup full of arugula from the garden, and a few marigold flowers. For the bulk of the salad, though, I turned to the wild plants in my yard.

My newly discovered favorite, garlic mustard (Alliaria Petiolata), provided a very nice mustard-green-and-garlic flavor to the salad. I included both the heart-shaped leaves and the petite white flowers in the salad.

It is a highly invasive plant, which can be harvested throughout the year. It grew in abundance on my property in Connecticut – if only I had known then how delicious it is!  In my area of the country, garlic mustard will flower from April to June. After that, the plant goes to seed.

Besides being delicious, renowned ethnobotanist Jim Duke (in his book, Handbook of Edible Weeds) points out that it is a highly nutritious plant, containing twice the betacarotene of spinach, as well as the cancer preventive constituents of both garlic and mustard.

I also included some young dandelion leaves. I have long avoided eating dandelion because I disliked the bitter taste, but I found that including a small amount of young leaves added a nice bite to the salad, along with plenty of nutritional value. Euell Gibbons, in his book Stalking the Wild Asparagus, recommends using leaves from dandelions before they have produced flower stalks.

Garden herbs

I topped off the salad with a delicious vinaigrette, made with a blend of fresh herbs from my herb garden, and a few violets for color. Here is the vinaigrette recipe:
1/4 cup chopped fresh herbs (I used rosemary, thyme, sage, oregano and parsley)
1/4 cup apple cider vinegar
1/4 cup olive oil
1 teaspoon of prepared mustard
2 garlic cloves, crushed
a pinch of sea salt
a dash of freshly ground pepper

Whisk all of the ingredients together, then pour over salad. It tastes best if prepared a couple of hours ahead of time to allow the flavors to blend.

Please Note: Make sure not to use any plants that have been exposed to chemical fertilizers, herbicides or pesticides. And if you are harvesting wild plants, only use those that are at least 8 feet from the road in order to avoid potential chemical runoff.
